Collard Green Wraps!
Looking for good ways to get greens into your diet? Look no further! With a little creativity, we can make collard or turnip greens versatile wraps! Stuff them with veggies, grilled meat, and hummus for a sub sandwich alternative or wrap a burger with them for a bunless option. Of course, you can enjoy these wraps with a plant-based protein such as tempeh as well.
Once blanched, greens will store in your fridge for up to a week. Prep all your ingredients, throw them together and then use them for quick and easy meals.
I used collard and turnip greens for the wraps, then stuffed them with organic ham, matchstick carrots, red onion, avocado, tomato, red pepper, black olives, and mushrooms. I used hummus for the dressing.
Start by cutting off the thick part of the stem. Slice it lengthwise as well.
Bring a pan of water to a boil. Using tongs, dip the collard green leaf into the water for 5-10 sec. DO NOT LEAVE IN THE BOILING WATER TOO LONG!
Immediately submerge the collard green leaf in an ice bath for 5-10 sec. Then place on a plate with paper towel and blot dry.
Stuff with all of your favorite ingredients. Add humus or mustard. Enjoy!
